These tasty quesadillas can be made in fewer than 15 minutes and are the perfect dinner option when you’re short on time.
4–6 tortilla wraps
1 can vegan refried beans
1 package Daiya Cheddar Style Shreds
Tofutti Better Than Sour Cream (or other vegan sour cream)
Preheat oven to 325 degrees.
Place 2–3 tortilla wraps on a cookie sheet. Spread refried beans ¼-inch thick on the wraps and sprinkle nutritional yeast on top. Add a thin layer of Daiya, and then top with another tortilla wrap.
Bake the quesadillas for 12 minutes. While the quesadillas are in the oven, slice the avocado and prepare salsa and sour cream containers for serving.
Remove quesadillas from oven and let cool for a few minutes. Slice each quesadilla into 6 segments and serve with avocado, salsa, and sour cream on the side. Enjoy!
