This simple pudding is one of my son’s favorites. Chia seeds are a wonderful source of fiber, protein, and omega-3s, and you can garnish the pudding with seasonal fruits to make it even more nutritious.
Ingredients:
1 cup unsweetened almond milk
2 pitted Medjool dates
½ teaspoon vanilla extract
¼ teaspoon cinnamon
3 tablespoons chia seeds
Directions:
In a high-speed blender, process the almond milk, dates, vanilla extract, and cinnamon until smooth. Pour into a large bowl.
Whisk in the chia seeds and let the pudding sit for at least 30 minutes, whisking occasionally, until the seeds have reached the consistency of pudding. It will continue to thicken as it sits.
Notes:
You can store this pudding in an airtight container in the fridge for a few days.
