Carob Cranberry Cookies


Carob Cranberry Cookies

These cookies are loved by vegans and non-vegans alike. Once you bring them to an event or make them for your children’s friends, they are sure to ask for them again. Nothing fancy about this recipe – just mix all the ingredients together, place on cookie sheet and bake!


1/3 cup of your favorite peanut butter

2 tablespoons canola oil

1 cup brown sugar

1/2 cup non-dairy milk (may need a little more if your batter is too thick)

1 teaspoon vanilla

1 1/2 cups wheat flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon baking powder

1 cup oats

1 cup carob chips

1/2 cup dried cranberries


  1. Preheat oven to 415 degrees
  2. Mix all ingredients together in mixer
  3. Drop dough onto cookie sheet (lined with parchment paper) by tablespoons about one to two inches apart
  4. Bake for 8-10 minutes
  5. Let cool for as long as you can wait
