Ghost Pumpkin Cupcakes

Nothing heralds in the fall season quite like the smell and taste of pumpkin, so it’s good that nutritionists and scientists have tied the squash to improved skin, eyesight, and even the immune system. Be sure to remember that as you sink your teeth into these delectable pumpkin cupcakes!

Ingredients:
Spice cake mix (Duncan Hines Moist Deluxe mix is a vegan option, but there are many on store shelves. Just be sure to look at labels.)
15 oz. can of pumpkin
1/3 cup of water
1/4 cup of applesauce
2 cans of cream cheese flavored frosting (read ingredients label) or make your own
Vegan candy eyes, or white round candies and a black food marker to create eyes

Directions:
1. Combine cake mix, pumpkin, water and applesauce in a bowl.
2. Line 24 cupcake or muffin cups and distribute batter evenly. Bake at 350 for about 20 minutes, or until a toothpick can be inserted into the center of the cupcake and come out clean.
3. Let cupcakes cool, then frost with a cream cheese flavored frosting. If you are frosting your cupcakes using a cupcake decorator to create a pretty mound of icing, I’ve found you need more than one container of icing. Also, if you whip the frosting before inserting it into the decorator, the volume increases.
4. Add eyes to each cupcake to create ghost faces.

Get ready to watch these ghosts disappear!
