This meal is one of my go-to weeknight meals. It is quick, easy, doesn’t require a lot of ingredients, and you can have some fun plating the dish!
Ingredients:
1 package of polenta
1 can of black beans (rinsed and drained)
1 medium to large red pepper
1 bunch of kale
Salt and pepper
Olive oil for cooking
Directions:
1. Place cast iron skillet on burner turned to medium high, add oil to skillet
2. Cut polenta into slices a little less than half an inch thick and place into cast iron skil-let
3. While polenta is cooking, heat beans over low to medium heat in a small saucepan
4. Cook polenta slices about 3-4 minutes on each side
5. Slice pepper and prep kale
6. When polenta is finished, place on dish
7. Add a little more oil to pan, some salt and pepper, and saute kale in skillet for 4-5 minutes
8. Make a cute face using peppers as mouth, polenta as nose, polenta and beans as eyes and kale as hair
